Get to know little better São Sebastião farm

São Sebastião farm was originally founded in 1945 and it was a dairy farm. Its transformation into a speciality coffee farm started in 2012, when Mr Jung Han Kim, a South Korean immigrant, acquired the land.

 

From the beginning, he intended to produce high-quality coffee beans that could please the palate of even the most demanding consumers. For this, he planned a coffee processing area that met all requirements so that the coffee beans could keep their great quality after being harvested and extracted.

 

Besides investing in the coffee processing structure (mechanical siphon, concrete sun-drying patio, greenhouse, elevated drying beds, a “The Cave”, rotary dryer, static dryers, cupping room), he began planting the coffee at an average height of 1,000 meters above sea level, so that the coffee quality on the bush would already be a differential. Based on research and professional advice, he selected a wide range of varieties, so it would be possible to map the best and most appropriate processing method for each variety every year.

Since 2017, when Mr Kim's daughter Catarina joined the management, the farm has been presenting significant evolution and development in all its fields. There has been a great improvement in speciality coffee production. With the deployment of new processing methods – such as fermentation – staff training, and a more systematic follow up of all processes during and after harvest. The farm has been Rainforest Certified, which provides certainty that sustainability and respect for others are part of everyday practices in the farm. The brand new Project is an Organic Coffee area implementation.
