Yellow Bourbon
The Yellow Bourbon variety origin is little known, but it is believed that it could be the result of a mutation in the Red Bourbon variety, as well as a natural cross between Red Bourbon and Yellow of Botucatu. Its plants have a low to medium height with crowns of large diameter. Its ripe fruits are yellow and have medium-sized seeds and a short and wide shape. Despite its low vigor and average productivity, its coffees have excellent brewing quality.

Mundo Novo
The Mundo Novo variety is the result of a natural cross between Red Bourbon and Sumatra. Its adult plants, between 12 and 14 years old, are tall and have a high productivity. Its ripe fruits are red in color, with medium-sized seeds of short and long shapes. Its coffees have a good brewing quality.

Yellow Catuaí
The Yellow Catuaí variety comes from a cross that united the vigor of the Mundo Novo variety with the yellow fruit and the low height of the Yellow Caturra. Despite its small size, its plants have medium-diameter crowns and high productivity. Its ripe fruits are yellow with medium-sized seeds and a short and wide shape. Its coffees have a good brewing quality.

Yellow Catucaí 2 SL
The Yellow Catucaí 2 SL variety was derived from a natural cross between Icatu and Catuaí. Its plants have a low to medium height, with high productivity. Its ripe fruits are yellow and have medium-sized seeds with a short and wide shape. Its coffees have a good brewing quality.

Topazio
The Topazio variety is the product of a natural cross between Mundo Novo and Yellow Catuaí. Its adult plants, at 7 years old, have a low to medium height, with a medium crown diameter and high productivity. Its ripe fruits are yellow and its seeds are medium-sized with a short and wide shape. Its coffees have a good brewing quality.

Asa Branca
The Asa Branca variety is the result of the selection of the 65 and 66 Acauã trees. These generated a more productive and uniform plant. Very similar to the Acauã, its plants have a low to medium height with high productivity. Its ripe fruits are dark red in color with medium-sized seeds of short and wide shape. Despite its late ripening, it has immunity to rust and high vigor. Its coffees have a good brewing quality.

Tupi RN
The Tupi RN variety originates from a cross between Villa Sarchi and Timor Hybrid. Its plants have a small height and medium crown diameter and present high productivity. Its ripe fruits are dark red in color and its seeds are large and have a short and wide shape. Its coffees have good brewing quality.

Catuaí 24/137
The Catuaí 24/137 variety is the result of a cross between Yellow Caturra and Mundo Novo. Its plants have a small size and high productivity. Its ripe fruits are yellow, with medium-sized seeds and a short, wide shape. Its coffees have a good brewing quality.

Yellow Icatu
The Yellow Icatu variety is the result of a natural cross between Red Icatu and Yellow Bourbon or Yellow Mundo Novo. Its plants are tall, with a very large crown diameter and high productivity. Its ripe fruits are yellow and its seeds are medium-sized with a short and wide shape. Its coffees have a good brewing quality.

Red Icatu
The Red Icatu variety is the result of an interspecific cross between C. canephora (Robusta) and Yellow Bourbon. Its plants are tall, with a very large crown diameter and high productivity. Its ripe fruits are red in color and its seeds are medium-sized with a short and wide shape. Its coffees have a good brewing quality.

Arara
The Arara variety is the result of a natural cross between Obatã and Yellow Catuaí. Its plants have a short height, with a medium crown diameter and high productivity. Its ripe fruits are yellow and its seeds are medium-sized, with a wide oblong shape. Its coffees have a good brewing quality.

New Acauã
The New Acauã variety is the result of a cross between Mundo Novo and Sarchimor. Its plants have a low to medium height, with a medium crown diameter and high productivity. Its ripe fruits are red and its seeds are medium sized, with a wide oblong shape. Its coffees have a good brewing quality.

Catiguá MG2
The Catiguá MG2 variety is the result of a cross between Yellow Catuaí and the Timor Hybrid (UFV 440-10). Its plants have a low growth habit, with a small crown diameter and high productivity. Its ripe fruits are red and its seeds are small, with a short and wide shape. Its coffees have an excellent brewing quality.

Acaiá
The Acaiá variety is the result of a selection of individual plants from the Mundo Novo variety. Its plants are tall, with a large crown diameter, high vigor and high productivity. Its ripe fruits are red in color and its seeds are large, with a long, narrow shape. Its coffees have a good brewing quality.



Authoring Process
The post-harvest structure at São Sebastião Farm was designed so that every year the production of specialty coffees could be carried out with all the necessary care and monitoring. In addition to the larger lots, it is possible to produce micro-lots and nano-lots with different processes that result in coffees with different sensorial characteristics. Making use of these advantages, in the year 2019, we idealized the project he named " Authoring Process". It consists of offering the possibility for the buyers of the coffees to convey guidelines on how they would like the processing of the coffee to be carried out after the harvest. These guidelines can be provided remotely or in person. In 2020 the first cupping resulting from this project was held at JKim Warehouses. In this cupping all participants were invited to try the author's lots of that harvest and give the score for each one. A way to exchange experiences and give prestige to the coffee professionals involved in the process.
